Metodo Charmat

- Sparkling Charmat or Martinotti method.
- Vines trained on the Canavese pergola, which keeps the grapes cool and well ventilated.
- Grapes: 100% white grapes (Erbaluce).
- Production technology: Harvesting earlier than for our OTTO METRI in order to have Erbaluce clusters that have not yet reached full maturity and a consequent higher acidity. Manual harvesting in not too full crates. Refermentation takes place slowly, in autoclaves, at a controlled temperature. After refermentation, the wine is left to rest on the lees for at least six months to complete maturation.
- Organoleptic characteristics: Brilliant in the glass with a beautiful straw yellow colour accompanied by golden reflections. The perlage is fine and persistent. On the nose it is ample and elegant, the delicate fruity scents are enhanced by aromatic notes . Minerality and freshness on the palate.
- Oenological characteristics: 12°vol.
- Serving temperature 6°c.
- Perfect as an aperitif and with delicate dishes.

The Sun Perch, also known as Lepomis gibbosus, is a freshwater fish found in Lake Viverone, which is characterised by calm waters rich in vegetation. This fish prefers shallow waters, typically at a depth of around 2 metres, where it can find refuge among aquatic plants and feed on insects, crustaceans and small fish. Nests for spawning are built by grooming the seabed with the tail.
